Iconic venue transforms to cozy pub managed by PINS, with Chef Livia Alarcon leading the kitchen.

PINS Social Club manages this project. They want to respect the building’s history, and traditional signs now hang outside. The pub aims to open this year.
The pub will have three floors. There is a taproom upstairs, while a “parlour” is on the first floor, and the lower level features a “tavern.” The design evokes Cheshire country pubs, and the name refers to cathedrals on Hope Street.
60 Hope Street closed in 2021 after 20 years. It then became Elite 60, a Turkish spot, and after that, it became Liu Shi, an Asian place.
Chef Livia Alarcon will lead the kitchen. She competed on Great British Menu and will oversee the food at Hope Street.
Livia grew up in Wavertree. She started cooking at age 16, worked at Maray, and ran La Bistroteca. She wants to elevate Liverpool’s food scene.
She wants to honor British ingredients. Her menu will reflect her Northern roots and culture, ensuring ingredients are seasonal.
Many dishes will cook over the fire. She finds open fire cooking magical and loves the smoke and fire flavors.
Livia has been working since 2019 on TV. She also cooked for Jay Rayner. The previous owners closed in April 2021, thanking everyone for 22 years.
